IS 17780 : 2021 FORTIFIED RICE

This standard prescribes the requirements and the methods of sampling and test for fortified rice. 1 Fortified rice shall be a blend of fortified rice kernels and polished raw or parboiled rice in the ratio of 1 : 100 or 2 : 100 with a tolerance limit of ± 10 percent of the declared ratio. Fortified rice shall contain micronutrients. Fortified rice kernels shall be uniformly distributed in fortified rice. Fortified rice shall be free from added colouring matter, foreign matter, metal pieces, mold, weevils, obnoxious substances, discolouration, poisonous seeds, rodent hair, excreta, and all other impurities except the limits specified in Table 1 of IS 17780. Pesticides/insecticides residues, poisonous metals, naturally occurring toxic substances and other contaminants (if any) in fortified rice shall not exceed the limit as prescribed in the Food Safety and Standards (Contaminants, Toxins and Residues) Regulations, 2011. Moisture content, Broken fortified rice kernels, Foreign matter, Damaged grains, Discolored grains, Chalky grains and absence of Admixture are some of the requirements specified in the standard.

IS 17781:2021 VITAMIN AND MINERAL PREMIX FOR MANUFACTURING FORTIFIED RICE KERNELS

Vitamin and mineral premixes are dry or liquid custom blends of a wide range of vitamins, minerals, or combinations of vitamins and minerals, which are used in food and beverages for enrichment or fortification purposes with an objective of enhancing the nutritional value of the products. This standard lays down the specification for vitamin and mineral premixes used for manufacturing fortified rice kernels. Vitamin and mineral premix shall be free flowing powder without any lumps, made from food grade forms of vitamins and minerals and shall contain vitamins and minerals in specified proportions. Vitamin and mineral premix shall be white to off white in colour with faint odour. It shall be easy to use and free from any objectionable or undesirable colour, odour and foreign matter. Chemical composition of vitamin and mineral premix shall be as under: a) Micronized ferric pyrophosphate or sodium iron (III) ethylene diaminetetraacetate trihydrate (sodium feredetate -NaFeEDTA); b) Folic acid; and c) Cyanocobalamine or hydroxycobalamine. Vitamin and mineral premix may also contain following chemicals: a) Zinc oxide (ZnO); b) Retinyl palmitate c) Thiamine hydrochloride, or thiamine mononitrate; d) Riboflavin, or riboflavin 5’-phosphate sodium; e) Nicotinamide, or nicotinic acid; and f) Pyridoxine hydrochloride. Chemical forms of micronutrients shall be micronized and uniformly distributed within vitamin and mineral premix.

IS 17782:2021 FORTIFIED RICE KERNELS

This standard prescribes the requirements and the methods of sampling and test for fortified rice kernels. Fortified rice kernels shall resemble the milled rice as closely as possible in final attributes, including shape, size (length, breadth, and thickness), thousand kernel weight, bulk density, true density, colour, flavour, and shall be free from off odour. The variation in the physical characteristics of fortified rice kernels such as length, breadth, thickness, thousand kernel weight, and true density shall be within10 percent when compared to the rice variety in which it is to be blended. Fortified rice kernels shall contain micronutrients such as iron, folic acid and vitamin B12. Moisture content, Broken fortified rice kernels, Foreign matter, Damaged grains, Discolored grains, Chalky grains and absence of Admixture are some of the requirements specified in the standard. Percent solid loss after cooking shall be less than 10 percent.
